Chicken and Mushroom Soup

Adapted from the Whole 30 Fast and Easy cookbook. It is indeed fast and easy, and quite savory!

8 oz mushrooms, sliced
1/2 cup diced onion
2 cloves garlic, minced
Olive oil, about 1.5 tbsp
3 medium sweet potatoes, peeled and cubed
32 oz chicken broth
3 cups cooked chopped chicken
1/2 tsp salt
1/8 tsp red pepper flakes
1/2 tsp dried thyme
Lemon wedges, optional

Saute onion, mushrooms, salt and red pepper in olive oil until mushrooms are tender, about 5 minutes.
Add garlic for the last minute of the saute time.
Add sweet potatoes and broth. Bring to boil, then cover and simmer about 15 minutes until sweet potatoes are tender.
Stir in chicken and thyme and heat through.
Serve with lemon wedges to squeeze over. Not necessary, but adds a little brightness to the flavor.
