Broccoli Salad

Broccoli florets, cut up small, from 3 or 4 heads of broccoli
Sliced almonds, about 1/4 – 1/3 cup
Cherry tomatoes, halved, about 1 cup
Golden raisins, about 1/4 – 1/3 cup
Sliced green onions, about 3

Dressing:
4 tbsp apple cider vinegar
12 tbsp oil (I use a mix of light olive oil and canola or vegetable oil)
Garlic clove, minced
1.5 tbsp Dijon mustard, more or less to taste
1.5 tbsp honey, more or less to taste
1/4 tsp salt

Mix the broccoli, raisins and onions in a big bowl. Whisk the dressing ingredients in another bowl until well-mixed, then add enough dressing to the salad to marinate it well. Before serving, stir in the tomatoes and the nuts.
All of the proportions can be done to taste. You could substitute other chopped nuts, or an apple instead of raisins.
