Zucchini and Walnuts
A great side dish! Or perhaps a meal in itself.
Ingredients:
1 large or 2 medium zucchini, about 2 1/4 cups sliced
1 tbsp. extra-virgin olive oil
1/2 cup finely diced onion
1 cup sliced baby portabella mushrooms (can use packaged pre-sliced, but cut up a little so they are not too big)
1/4 tsp salt
1/8 tsp fresh ground black pepper
3 tbsp. finely chopped walnuts
2 tsp finely chopped mint leaves
Steps:
Slice zucchini in half lengthwise. Cut each half lengthwise again so you have 4 pieces. Slice across into1/4 inch slices.
In a large skillet over medium heat, add oil. When oil is hot, add onion. Cook, stirring occasionally, for 1 minute.
Add mushrooms, zucchini, salt and pepper. Cook for 3 minutes, stirring occasionally.
Add walnuts and mint and cook for 1 minute. Remove from heat and serve.
