Kale Chips

This sounds weird but is actually quite good.  Even Dad liked it!  I got the recipe from Dr. Tim Fox, who recommends that we eat lots of green leafy vegetables so we get the lutein needed for healthy eyes.  The chips are great as a snack or to serve with sandwiches.  It kind of stinks up the house, so you might want to open a window while baking.

4 packed cups of kale pieces (see below to prepare before measuring)
1 tbsp olive oil
1/4 tsp salt
pepper or other seasonings if desired


Preheat oven to 325 degrees.
Wash and dry the kale. Remove the ribs from the kale and tear or cut into 1 1/2 inch pieces.  Lay on a baking sheet and toss with the olive oil and salt.  Bake 15 minutes, turning leaves about halfway.  Turn off the oven and leave the kale inside until it gets dried and crispy to your liking, about another 20 or 30 minutes.
