Yorkshire Pudding

This is your basic recipe. You can make this as popovers using muffin tins or popover tins or the traditional method in a baking dish.
As pop-overs you get more of the puffy pastry effect, in a baking dish you get more of the pudding effect. Both are comfort food.


1 cup flour
1 cup milk
2 eggs
1 tsp salt
butter (or beef drippings)


In large bowl add flour, milk, eggs, and salt
Mix well
Cover with saran wrap and let sit in fridg for 30 min (optional)
Warm muffin tins or baking dish in 400 F over
Put small amout of butter in warm dish (or each tin)
For 12 large muffin tins, fill each tin 1/2 to 3/4 full
Bake in 400 F over for 15-25 minutes
Should be puffy and golden brown when done
Serve immediately with beef or lamb.
