Roasted Broccoli

This is a nice change from steamed broccoli.

1 broccoli crown (can include stem)
4 tbsp olive oil
1/2 tsp sugar
1/4 tsp salt
1/4 tsp pepper
Lemon wedges

Adjust an oven rack to the lowest position, place a foil-lined rimmed baking sheet on the rack, and heat oven to 500.  Cut the crown in half, then place each half with the cut side down and cut into 4 – 6 wedges.  (If you have the broccoli stem you can use it too – just peel it and then cut into 1/2 inch thick pieces.)  Toss the broccoli pieces with the oil, sugar, salt and pepper.

Carefully place the broccoli, flat sides down, on the preheated baking sheet and roast until the bottom sides are well browned and tender and the florets are lightly browned, 10 to 12 minutes.  Transfer the broccoli to the platter and serve with the lemon wedges.

The fresh lemon juice is great squeezed over the broccoli.  There is a down side to this recipe: your house will smell like broccoli for a while!
