Sauteed Spinach

This is a great side dish any time.  We have it once a week and we never get tired of it!

Ingredients:

   One bag of washed spinach (6 – 10 oz.)

   One clove garlic, minced

   Red pepper flakes, 1/4 tsp

   Olive oil, 1 – 2 tbsp

Instructions:

Put 1 – t tbsp olive oil in heavy frying pan.  (Use 1 tbsp for small bag of spinach, 2 tbsp for large bag.)  Add minced garlic.  Heat oil on medium heat until garlic starts to cook, then cook for about 2 minutes.  Add red pepper flakes and cook for another 1 or 2 minutes or until garlic is soft but before it gets brown.  Add spinach leaves and cook, tossing to coat all with olive oil.  Cook and stir until spinach is cooked down and soft, just a few minutes.  Season to taste with salt.

The only problem is that the spinach reduces so much when it cooks and everyone wants more!  One bag will serve two people.   You can also cook Broccoli Rabe this way if you want greens with a stronger flavor.
