Baked Zucchini Parmesan

This is an easy side dish that goes with just about anything.  




   Fresh-grated parmesan cheese

   Olive Oil


1. Wash zucchini and cut into halves lengthwise. Place in foil-line baking pan or cookie sheet.

2. Brush or rub zucchini with olive oil.

3. Sprinkle with salt and pepper

4. Sprinkle with fresh-grated parmesan cheese

5. Bake at 400 for about 20 minutes until done (depends on size of zucchini).  Test for doneness by sticking with a fork. If the zucchini is done but the cheese is not brown, you can put it under the broiler for a few minutes until the cheese is light brown.
